1. Soak three kinds of mushrooms, chickpeas and chestnuts for 30 minutes.
2. Soak the white lotus until soft (remove the core of white lotus to avoid bitter taste).
3. Repeatedly wash & squeeze the yellow water for blaze mushroom 3-4 times to avoid bitterness. Wash all other ingredients for later use, remove the core of the red dates.
4. Put all the ingredients into a pot with 13 bowls of water bring to boil on high heat, then turn to medium-low heat for 1.5 hours. Season it with salt and serve.
Note: Avoid boiling too long, as walnut and white lotus seeds will gelatinize when cooked for a long time.
